These cookies are just so delicious, way too good! They are really easy to make so you really dont have a reason not to make them!

They were gorgeous when they came out of the oven, and the aroma of freshly baked vanilla sugar cookies made the house smell heavenly!

Now, you and your kiddo could have it just by itself, but for the added oomph, I dipped these in good quality Dark Chocolate – I used Callebaut- you could use whatever chocolate you like!

The recipe is an adaptation from Sweetsugarbelle . I have tried a few before, but this one is by far the best! And it did retain the shape very well!

For the cookies

Yield: 12 big or 24 mini cookies

Melt in Mouth Sugar Cookies Dipped in Dark Chocolate

Ingredients

For the Cookies

1/2 cup unsalted butter - softened

3/4 cup . confectioner’s sugar ( castor sugar)

1 egg

1 tsp vanilla extract- you could use whatever you like almond extract etc

1 1/2 cup . all-purpose flour

1 tsp. baking powder

1/2 tsp. salt

For the Chocolate glazing

1 cup chopped dark chocolate.

Instructions

Cream together butter and sugar. Dont beat it too much we dont want to incorporate a lot of air

Beat in the egg with a hand whisk.

In a separate bowl, mix the dry ingredients - flour, salt, baking powder

Add the vanilla extract.

Add the flour mixture gradually , incorporating everything together, until it becomes one homogenous mass

Wrap in cling film and rest in refrigerator for 30 mins.

In the meantine

Preheat the oven to 180 Deg Celcius

Roll out the dough 1/4 inch thick. You can use a little AP flour to roll if it gets greasy

cut out using cookie cutter.

Bake for 8-10 mins. I always eyeball the bake time for cookies, you will bake it till they are very very mildly pink.

They will be soft to touch but will harden once out at room temperature for a while.

Once these cookies are thoroughly cool, microwave the dark chocolate for 30 secs at 75 % power , again for 30 secs... once melted dip the cookies.

You could decorate these cookies with cookie glaze or royal icing as well.
These cookies have a shelf life of 10-12 days . Ofcourse these are preservative free! They might last longer in colder places . Store them in airtight containers.
