For those who personally know me, they also know that I love to bake, and my kid loves to help me. Baking is not just for the tastebuds, its very therapeutic for me, and we ( me and Zoey) have great fun in the flour cloud!

Baking might not be native to India, but for those who dont bake, dont fret- start very simple.

This is a fairly simple one bowl chocolate- chocolate chip muffin recipe and the outcome is gorgeous.

The recipe has been adapted from Nigellas many recipes.

The recipe

This recipe makes 12 medium- big muffins or cupcakes

You would need

1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons best quality cocoa powder
3/4 cup castor sugar
3/4 cup semisweet chocolate chips, plus 1/4 cup for sprinkling
1 cup milk
1/3 cup plus 2 teaspoons vegetable oil
1 egg
1 teaspoon pure vanilla extract

1/2 tsp salt or less

 

Make sure everything you have is at room temperature.

Preheat the oven to 180 degrees Celcius

Sift together flour, baking powder, baking soda, cocoa.

Add the sugar  and chocolate chips and mix well. Reserve some chocolate chips for topping it

In another jug/ bowl mix all the liquid ingredients.

Now slowly add to the dry ingredients – using a hand mixer . If you dont have one use a manual whisk. But hand mixer – I cannot think of my life without one!

once the batter is ready. Line the muffin tin with paper liners.

Add the batter to 3/4 fill the liners

Add the remaining chocolate chips over the batter in the liners .

bake for 16-18 mins – And remove from the oven once the muffins pass the toothpick test (That is, toothpick inserted should come out clean)

What I like about this chocolate chip cupcake recipe

Its so simple, you could ask a kid to do it. I am sure an older kid can do this all by themself. Zoey assists me and has loads of fun

The use of oil makes this moist and delicious.

Its a one bowl recipe and hardly even requires a lot of mixing. Come on, do you need any more reasons to make it?

Kids are going to love it!

Tips

These tips are not for the avid bakers. Make sure all your ingredients are always at room temperate when you bake, unless the recipe calls for cold ingredients (like making a pie crust that requires cold butter)

Do not overmix the batter- your muffins will become hard

Always preheat the oven at the right temperature.

Sift the dry ingredients to avoid lumps

Always try and use vanilla extract instead of cheap vanilla essence. You now get vanilla essence at Natures basket easily, they also store vanilla pods.

Use good quality cocoa- I prefer Hersheys. Cadburys’ will do as well. Please do not buy any other cheaper brand!

Involve your kids, it does get messier , and honestly I do lose it at times! But they enjoy!! And Zoey now just has the ingredients at the back of her head

    I agree with the therapeutic part of baking – seeing all those disparate ingredients joining together and rising in the oven, love it!! Not to mention the lovely smell! These are really easy cupcakes – just one mixing bowl and muffin tin to wash!!

    The recipe looks very yummy…..will surely try it out…..a small query regarding the choco chips, where do u buy them?……the one that I find in our local grocery store don’t melt very well while baking(some local variety)…..i checked out in the portals mentioned in the post , but they don’t seem to have them…..thank u

      Mrudula , welcome to the blog! I get the chocolate chips from Q mart in Hyderabad, never had a problem. I am not sure which city are you located, but I dont think in that case, any should have a problem. Just make sure you use them well within the expiration date!

    Will try these over the weekend. Is vanilla extract available in Nature’s basket? I bought Natural Vanilla Beans from Nature’s Basket since I didn’t know what to buy.

      Snehal Vanilla extract is not that easily available, but you can use vanilla beans to make vanilla extract. Another option would be to use lorann oils available at natures basket. You could also scrape out the stuff off the pod and directly into the mixture. But making your own extract is the best option. Check out Purplefoodie she teaches how to make your own extract

      Hello Snehal you get these at department stores easily. Atleast here. You should get this for sure in Hypercity in Mumbai. Or get it online at gourmetco… Mumbai should have more options than Hyderabad!!!
