This is an absolutely lipsmacking recipe of egg pudding by one of our reader mom who is a fantastic cook – Vaheetha Sundar

 

Vaheetha lives with her family in Dubai and this is what she says

I started to do this for my little one… but  all my friends kids loved it so much…whenever they come over , I  give it as a breakfast for them…I hope your readers love my recipe and the kids enjoy as much as mine does

Egg Pudding recipe

Egg Pudding Recipe By Vaheetha

Ingredients

2egg
4 glass milk (200 ml glass)
1spoon vanilla essence
10 spoon sugar ( can add more according to your taste)

Method

 

 

Beat the eggs and keep it separately..

Boil the milk so that it becomes half of the quantity. Let it cool till it comes to room temp.

Now Add the beaten egg and sugar to the milk

In a vessel add 4 spoons of sugar and make caramel.Let it  set and become stiff.

Now add the mix in this caramel base.

Steam in the pressure cooker for 2-3 whistle..

Tastes good when its chillled

    sounds really nice…. did not get the last step to cook in a cooker? never done tht….. any other option? ideally does this have to be steamed? can w use the idly maker?

      Karuna, you could pour into individual ramekins and steam cook for 20 mins :)

      If you dont have a pressure cooker, Place the mould into the boiling water. Be very careful here again. A suggestion is…… close the flame of the boiling water and then place the mould in the pan.
      The boiling water should be upto 1/3rd of the mould. Cover the pan with a lid and steam for 20 mins on a medium flame.
      Make sure that during steaming, the water does not dry. If required, add more water.
      After 20 mins, test the center of the caramel pudding with a knife. If the knife comes out clean, the pudding is done……. or else you will have to cook if for some more time.
      Allow the pudding to cool a little. Now we come to the unmoulding part. Keep the serving dish or plate on top of the mould. Gently turn the serving down, so that the mould comes on top of the serving dish. Tap the mould gently…… and allow the custard to unmould itself from the mould.
