Beetroot Rice recipe

As a mom, you are always hunting for ways to incorporate nutrition in your kids diet,in my quest for that , I ended up making this extremely yummy recipe which  is colorful and  hence kids love! This is a tasty and healthy recipe that I have been wanting to share on this parenting blog.

Why only kids, we loved it too, and this might just become regular at home.

Beetroot Rice / Beetroot Pulao / Beetroot Pilaf

Ingredients

1 cup grated beetroot

2 cups Basmati rice

1 onion chopped

1 green chilly

1 bay leaf

2 green cardamoms

1 small piece of cinamon stick

2 cloves

1 tsp ginger garlic paste

1 tsp coriander powder

1/2 tsp cumin powder

1/2  tsp garam masala powder

coriander for garnish

3 tbsp oil

 Method

Boil water ( maybe 10 cups or more) with the bayleaf, cardamom ,cloves and cinnamon ,salt . Cook rice till its a little more than parboiled but not mushy. Drain and keep aside

In a wok / kadai , add oil, the green chilly, onion and ginger garlic paste

Saute onion till pink.

Add the powdered masalas.

Add the grated beetroot. Cook covered , on medium, for 6-8 minutes, till raw smell  is gone. You might add more salt to taste

Toss in the cooked rice, cook on low flame for 2 minutes.

 

This rice is absolutely lip smacking. Your family will love!

Garnish with coriander . Serve with Raita or curd

    Superb!! Perfect for those days when you’re too lazy to bother cooking/washing multiple dishes!! A one pot meal with some curd and pickle, and you’re good to go :-) )

    This looks yummy…I would like to try it with curd… I know it might sound to be a very weird combo to …but u see being in south I have started liking curd rice…
